My sister, Vicki, lost her battle with cancer on February 13. We decided to throw her a birthday party on her birthday, May 13. I decided to bring the cupcakes and knew she liked regular vanilla. I also knew she liked brownies, so to combine the vanilla and chocolate aspects, I found this recipe online.
This was the first time I’d ever heard of vanilla bean paste, which is really more like a syrup with the pretty little black specks of vanilla. I found it at Fresh Market. I LOVE the speckled effect it lends to the cake and the frosting.
For the chocolate cream, the recipe calls for Marshmallow Fluff. I couldn’t find any at the store, so I substituted Marshmallow Cream and it turned out just as yummy. This is definitely a cupcake I can’t wait to make again!
And, bonus! I got to use my special cupcake tin with an attachment that goes over it when you bake to create indentations for fillings. It was so much fun to use and really made it easy to fill the cupcakes. Too bad I only have one! lol
